Since 2003, Alain Ducasse has had a stake in the Hong Kong dining scene with Spoon. After 13 years, the contemporary French restaurant will end its dining service after January 1, 2017, and undergo renovation with a brand new concept, Rech by Alain Ducasse, tentatively opening in mid-February 2017.

The original Rech was opened in 1925 by Adrien Rech, as a celebration of fresh seafood from oysters to fresh shellfish.  The restaurant was revamped in 2007 when Alain Ducasse took over. The new Hong Kong restaurant will take inspiration from the interior design of the original Parisian restaurant after its revamp in 2012 by Marie Deroudilhe.

The new restaurant will showcase fresh fish and seafood shipped directly from France and adapted in various courses including:

- Blue lobster, courgettes and currants
- Thinly sliced sea bream, cucumber and ginger
- Pan-seared line caught sole, new potatoes
- Baked John Dory with baby Swiss chards and confit lemon
- XL éclair, chocolate or coffee

Taking the helm of the kitchen is Stephane Gortina, currently at the helm of the kitchen at Spoon and an Alain Ducasse alumnus for 11 years.
