Bringing Polynesian chic to Wellington Street this October is Max Traverse, creative bartender and mastermind behind Le Boudoir. His latest project, Honi Honi Tiki Cocktail Lounge, plays homage to San Francisco’s Tonga Room and Hurricane Bar, and the Trader Vics empire. The new cocktail lounge will focus on drinks made from fresh ingredients and top-drawer alcohol, with many of Traverse’s signature drinks taking their cue from fresh fruit. An expansive rum menu is promised, too.
Among the mixes will be tropical classics such as the Mai Tai and Pina Colada, while there will also be larger-than-life cocktails for sharing, including what is promised to be the “most expensive cocktail in town” – the four-litre Around the World, priced at HK$2,888 and served in half a globe.
The bar’s design has been left up to design and interiors firm Three Wise Monkeys, and features an open-air terrace with lush greenery, contrasting with sleek hotel bar elements and Polynesian trinkets.
