Located four hundred metres in the sky on the one hundred and first floor of the International Commerce Centre, The Sky Boss is an exhilarating place. From the private valet parking to the 32km/h lifts that ascend in silence opening to a marble lobby where guests are greeted and personally led to the restaurant. Entering the doors of The Sky Boss the towering walls of glass capture Hong Kong’s beautiful panorama, by day natural light fills the restaurant offering views as far as the eye can see and by night, the lights of our urban sprawl glimmer magnificently asunder. A contemporary interior design with walls of marble and modern chandeliers framing elegantly dressed tables set spaciously apart from one another create an atmosphere of relaxed luxury.
The Sky Boss specialises in traditional Chinese cuisine with modern interpretations that evolve familiar taste expectations to new dimensions. Using only the finest quality ingredients handled with expert care in the kitchen reflect true culinary mastery by the chef. A signature dish of deep fried chicken pieces with homemade shrimp sauce is testament to a chef who understands the intricacies of seasoning producing delicate flavours wrapped around succulent pieces of chickens. Baked crab with vermicelli and a homemade sauce was exceptional, the flavour of the crab infused throughout the pasta which itself was enveloped in a delicate sauce that lingered on the pallet as aromas indulgingly invite you to want to eat more of this delectable dish. A soup of double-boiled pig lungs and fish maw with almond was exquisite, evidence of the chef’s ability to understand the complexities of flavour to produce a diffusion of flavour that was perfect. A dessert of deep fried sesame balls with egg yolk is familiar but The Sky Boss raises to a level of epicurean perfection with a thin red bean infused glutinous-rice wrapped and fried with a delicate outer crust that when pieced releases a fragrantly delicious egg yolk custard, indulgent and impossible to stop at three!
A disappointing wine list that failed to match the diversity of the food menu. A predictable selection of wines from well-known but not exceptional vineyards offering an even smaller selection by the glass.
Excellent service from the moment you are greeted politely and shown to your table. A good understanding of the menu allows questions to be answered assuredly and alternate choices to be chosen that may compliment the overall dining experience. Plates were constantly refreshed, tea refilled and an overall desire to ensure your evening passes perfectly reflected in a team that works in unison with the kitchen.
An evening meal for two with wine or premium tea will cost just over $1,500.00, this price may soar if indulging in rare and exotic dishes that sadly form a large part of the menu.
