Located next to one of the casino’s VIP private entrances Wing Lei is designed as a place for high rollers to feel at home; the use of light colours and highly polished white and yellow gold marble immediately offer a sense of absolute luxury and indulgence; a dramatic crystal dragon occupying one entire wall welcomes guests in dramatic fashion; widely spaced tables covered in crisp red linen adorned with the finest quality cutlery and porcelain only further the sense of indulgence. Huge windows flood the room with light and offer views out over the bay; beautifully arranged flowers set under chandeliers complete a room where attention to detail pays off wonderfully.
Cantonese cooking at its finest; Wing Lei’s chefs have a proud tradition of allowing the fragrance and spice of tradtional cuisine to shine and they do it masterfully; rather than accept the status quo the kitchen produces cuisine with contemporary touches that add new depth to expected flavours; a use of only the finest ingredients only adds depth to the culinary experience; tea smoked crispy chicken is heavenly; the aroma filling one’s senses before any morsel has been tasted; the deft skill of the chef in creating a skin delicately infused with the smokiness of the tea whilst remaining thin and crisp; the moist flesh of the chicken simply melting in the mouth; a simple disk of kailan served with ginger was perfect; the kailan trimmed and steamed to perfection with the essence of ginger never overpowering a testamant to allowing the natural flavour of food to shine; the signature barbecued pork buns with sweetened crust are devine; a golden crunchy top with finely diced caramelised onions and fragrant barbecued pork; an elegant interpretation of a modern classic,and impossible to stop at three!
As befitting a restaurant aimed at the high roller’s the hotel’s master wine list is available; if the tables have been kind one can order some of the world’s most prestigious vintages; a more affordable range is also offered with some interesting local boutique wines; a good range available by the glass as well as a small but interesting range of Chinese teas.
From the moment you are greeted and walked to your table the service is attentive; questions about the menu are answered with knowledge and the staff able to offer suggestions of what to order; plates are always cleared, glasses refilled and napkins replaced; Wing Lei offers service that matches the cuisine – excellent.
