On the sixth floor of the Landmark building, Zuma’s bar perches above the frenetic restaurant below. The vibe here is a little more serene but just as dynamic, the interiors are sumptuously refined and include a mixture of high tables perfect for after work drinks and mingling and more private sofas for an intimate night cap. The crowd is diverse but engaging, on weeknights young professionals bop along to the house DJ sipping a cocktail and at the weekend smart couples enjoy a pre or post prandial. The bar has an extensive wine list (and glass-cased wine cellar on display) and a large amount of Japanese whiskey, including some incredibly rare and expensive bottles perfect for the connoisseur. Zuma’s cocktails are some of the best in the city and take mixology to the next level with incredibly well crafted drinks using a Japanese approach that ensures purity dedication and precision. If you only have the chance to try one (impossible) go for the Smoked Japanese Whisky Sour.
Split over two floors of the Landmark building in Central, Zuma’s setting is impeccable. It boasts all the hallmarks of a chic cosmopolitan eatery: Tall ceilings, a grand staircase, floor-to-ceiling windows, and an expansive terrace are all decked out in chic glass, steel and stained wood. The space comes alive with diligent chefs working at open stations whipping up modern takes on traditional Japanese fare.
Come to Zuma hungry. The menu spans sashimi, sushi, robata and some signature dishes—there is a lot to sample. A Japanese restaurant’s pedigree can be measured in the quality of its sashimi. The old favourites of salmon and tuna are incredibly fresh and tasty. For something a little progressive, signature sushi options include wagyu tataki with caviar.
Zuma’s robata grill deliver fantastic barbecue flavours. The yakitori is sweet, soft, and tender with fantastic char-grill notes. The chicken is lean and avoids being greasy or oily.
The sliced yellowtail with green chili relish, ponzu and pickled garlic is a refreshing start to the meal and really should not be missed. The fantastically fresh yellowtail is complimented by a succession of new and exciting flavours including spicy relish and intense garlic—proving Zuma’s aptitude at innovating and elevating traditional Japanese flavours.
The miso-marinated black cod is a firm favourite of the restaurant. The presentation excites as the fillet arrives wrapped in a bright hoba leaf. Some might find the oiliness of the fish, the rich sweetness of the miso and the intensity of the creamy white miso sauce a little too much.
Zuma’s wine list is sure to satiate thirst for something from both the East and the West. The range of Sakes is extensive and the staff is ready to help you navigate the range of hot and cold sake. If you prefer some wine with your meal Zuma’s selection is expansive with a particular interest in French and German wine.
Smiling and attentive servers move quickly and add to the dynamism of the restaurant. Dishes come and go in an Asian style which is all part of Zuma’s cosmopolitan vibe may not suit someone who prefers a quieter more structured evening.
Zuma is one of Hong Kong’s must-try restaurant and the evening really takes you on a journey via your tastebuds in an exciting and dynamic setting. The offerings are diverse—there is something to suit every appetite and wallet.
