Hokkaido Wine Dinner at Armani/Aqua
The Japanese and Italian restaurant Armani/Aqua in Central has invited chef Nohirisa Maeda-san from Hokkaido to prepare a four-course menu tomorrow night, paired with chardonnays from Valle d'Aosta, a semi-autonomous region nestled at the foot of Mont Blanc in Italy. The menu includes:
- scallop, snow crab, squid and cod roe sushi, paired with a 2009 DOC Valle d'Aosta Chardonnay
- sea urchin, sweet corn and edamame tempura with a konbu-cured botan prawn; paired with a 2007 "Cuvee Bois" Valle d'Aosta Chardonnay
- grilled smoked salmon and asparagus with Ishikari miso sauce, paired with a 2007 Valle d'Aosta Syrah Coteau La Tour
- red bean chiffon cake and vanilla ice cream, paired with a Valle d'Aosta Vino di Uve Stramature "Les Abeilles"
